A pack of 12 blue corn tortillas made from heirloom blue dent corn using the traditional nixtamalization process. Fresh, flavorful, and made in small batches.
Tlaxcalli, the Nahuatl name for what we now call tortillas, is at the heart of how I cook and eat. I make fresh heirloom corn tortillas for families, home cooks, caterers, and small businesses, using techniques passed down through generations of women in my family. This is how I learned, at home, in the Cocina, just watching and doing.
Using heirloom maíz grown in the Pacific Northwest, I follow the traditional process of nixtamalization. It takes more time, but it’s the way tortillas are meant to be made, and you can taste the difference.
